PostHeaderIcon Orange, Poppy Seed & Chia Seed Muffins

There’s a very special secret ingredient in these muffins.  If you haven’t come across Chia seeds before, go check out my post about them for more info.

Ingredients

125g softened butter
6 tsp finely grated orange rind
150g caster sugar
1 egg lightly beaten
300g self-raising flour
1 tbsp poppy seeds
2 tbsp chia seeds
juice of an orange (made up to 250ml with milk, though you might want to add them separately to the mixture to avoid curdling)

 

Method

  1. Preaheat the over to moderately hot (200 degrees C, 400 degrees F, gas mark 6)
  2. Combine butter, rind, caster sugar, egg, flour, milk and juice in a bow
  3. Beat with electric mixer until just combined
  4. Increase speed to medium and beat until mixture is just changed in colour
  5. Stir in poppy and chia seeds
  6. Divide mixture among holes of prepared pan, or into muffin cases
  7. Bake muffins for about 20 minutes.  Stand muffins in pan for a few minutes before turning onto a wire rack to cool

I then iced mine with lemon icing….

 

Ingredients

2 cups of icing sugar
enough lemon juice to make into a paste…put about a teaspoon or two of icing onto each muffin and spread around.


PostHeaderIcon Homemade Lemon Ice cream

This really is just tooooo yummy!!!

Ingredients

100ml whipping cream
400ml milk
juice of 2 lemons (you can add some grated rind too to make it more ‘lemony’ if you wish)
1 cup of sugar

 

Method

  1. Beat together the whipping cream, milk and sugar until the sugar has disolved
  2. Whilst still beating add in the lemon juice and the rind if you’re using it
  3. Once it’s all combined, add into your ice cream maker and follow your manufacturers instruction.

I have a KitchenAid with an ice cream bowl attachment.  For that you simply pour in the ingredients and ‘dash’ for about 10 minutes before putting into a container and putting it into the freezer.  Takes about 1/2 a day to freeze down to eating temperature.

We’ve just started our own veggie patch and one of the first crops was jalepeno chillis. This is the recipe we adapted and Hubby looooooves them, so much they make him hiccup!
